what ferns can you eat?

I've seen that you can eat ostrich fiddleheads, but I also heard that other fern fiddleheads are also edible. Are they all edible? Or just a select few types? We have many types of ferns (not sure what kind) but I have bought some ostrich ferns last year, but I want to know if I can eat any others instead of waiting for the plants to get big enough to harvest some fiddles. Thanks!

In Asia people eat bracken fern but such consumption has been linked to an increased rate of stomach cancer. Many ferns produce the enzyme thiaminase, which breaks down vitamin B1 unless cooked thoroughly. There is probably little harm in eating them occasionally after cooking but they are things to keep in mind. As to other species you can or can't eat, that I do not know.

Ferns are tasty. Many foods will make you sick if you eat enough of them. At a meeting of the Texas Gulf Coast Fern Society we had a program that included Fiddlehead casserole, Steamed fiddleheads, and fiddlehead salad. It was good fun. They are available on line, most commonly Bracken Fern Pteris aquilina. Vegetable fern, Diplazium esculentum, is very easy to grow and can take over your garden in no time. It makes a little tree fern and is great in salad.
