another mushroom i.d. from south jersy novice

Hi all, I was wondering if someone could identify this wild m/r for me. I know that its edible since my 'ol'time shroomer' neighbor eats them all the time but he doesn't know the name or nickname of it(nor will he tell me where there located around (like oaks, birch,pine etc..)He's so secretive it drives me nuts! Anyway, if anyone can help please do..It has an orange/light red top of cap, and the underside is porous instead of having gills. The underside bruises kind gray to dark gray. Stem is white with black 'sploshish' areas.
