I think I hear two different questions.

My favorite amaranth, hands down, is Opopeo from Johnny's Seeds. Velvet Curtains from Gloeckner looks to be the same, but I don't know that it is, and so does 'Oeschberg' from Select Seeds. My customers love the color of the heads, the leaves are great as foliage in bouquets, and it produces over a nice long time.

My favorite green (mostly) amaranth is Autumn's Touch with its green and bronze heads. I use a lot less of it than the Opopeo, but it comes in handy sometimes. As the heads mature, some of them form themselves into almost Dr. Seussian shapes that have struck a chord with customers who like something a little different and strange. By that time in the year, they are dropping stuff all over, but for outside bouquets they are fine.

Give them room to grow. They get big.

'Love Lies Bleeding' in red, the green is so-so. They dry very well also.
