Why are my Dahlia blooms sometimes double and sometimes not?

I bought about 15 new Dahlia varieties this year and I've noticed that some of them will sometimes have blooms that are nice and fully double with no visible center but other blooms on the same plant will sometimes have a visible center. What is the cause of this? Is it a nutrient deficiency? They have gotten plenty of water this year.

Open centers can be caused by hot weather.

Thanks Ted, I've got plenty of that these days! I'm also getting some color fading. I saw pictures of one garden where they were using shade cloth over their Dahlias, perhaps I'll consider that for next year.
