I always let mine bloom. As long as you keep them watered, the roots should grow just fine.

If they are double fans or larger, I let them bloom. If they are single fans, and costly, I may or may not let it stay stay. On Hyacinth Macaw, a not very substantial appearing single fan, I cut the scape. this year, it is still a single fan, but a robust one, so I let it bloom this year.

Last year, I allowed the scape to stay and allowed two blooms to open. It too is still one fan but robust appearing this year.
