If you are not planning on putting the plants in the ground this year. Then by all means trans plant them to a larger pot. Once they are in the 1 gallon pots they will still be small plants by the first frost but you can at least move them out of danger of freezing. If the parent plants you got the seeds from are cold hardy dormants then the plants will be able to take a cold temperature.
The main consideration will be watering in storage. You will have to try to keep the pots from completely drying out. Just slightly moist to dry would be about right.
