In general, any time you cross two daylilies with a very different feature, you should expect to see some seedlings with the first plant's feature, some with the second plant's feature, and some in between.

With doubling, this might mean that a lot of the seedlings are sometimes double or partially double, while others are always single or always (almost always) double.

The more you cross things with similar traits, the more you are likely see the consistent traits in the seedlings. Gene dominance will affect the amount that different traits are seen, and sometimes this can be very complicated.

If you want doubles, then it might work out best if you cross the F2 generation back and forth to each other.

If two singles of the F2 generation, both containing one dominant allele for "single" (the one you see) and they each carry the recessive allele for doubling (the one you don't see), you stand a good chance of getting doubles (as well as singles) in the F3 generation.

Recessive alleles can travel through any number of generations before they meet with another like recessive, thus appearing in offspring. That's what makes hybridizing so much fun! There's always the unexpected that turns up.
