daylilies

Since my grandmother died last October and my parents inherited her home, I have made it my job to care for her beloved flowerbeds. Mostly daylilies. When she was able she was always outside and her yard and her flowers were immaculate. I have only just begun. I used to help her dead-head them but that's all. Now I am pulling weeds, dead-heading old blooms when needing, and pulling all the dead leaves. All but one have ceased blooming, and the chutes are all pulled. I have begun cutting the leaves back now and I notice that some still grow back. Am I supposed to keep cutting them, or should the part that isn't growing be cut off completely? Plus any instructions on transplanting parts of plants to other locations would be helpful. Mainly how to get the other locations "plant-ready". Does anyone else have terrible problems with what my grandma called "nut grass". I know this is long, but I'm like totally new to this. I know what I'm doing would please her. Thanks!!!
