Amaranth [love lies bleeding]

I planted a bunch of Amaranth caudatus [Love lies bleeding] this year and now I've got some truly gorgeous plants. I've hard I can dry them, but I've also read that Amaranth can sometimes be eaten. Does anyone have any information a] how to treat Amaranth for drying and b] if it can be eaten and how that is prepared?
