Loquat/bonsai version?

Every year I go to San Antonio in the spring and eat lots of loquats. I bring the seeds back, plant them and keep a few in pots, trading the rest. I'm getting too old to haul the huge potted ones in and out of the garage when the temps fall too low, but I can occasionally get fruits by doing that.

Here's my question: would it be possible to prune the plants to keep them a manageable size and still get fruit? The ones I've had bear fruit were in huge pots (~36") and the trees were about 5' tall, measured from the top of the soil. Very heavy, as you can imagine! It occurred to me that with judicious pruning I might be able to keep them in smaller pots which would make moving them a lot easier. Does anyone have experience doing that?
