High Altitude Edibles

Hi!

My name is Phil Magistro. I am interested in putting in an edible landscape around my cabin, and am eager for all the help I can get.

I live in Estes Park at 7,500' feet and in Zone 5. It is a difficult area to garden. Our frost free season is about a month long. We get about 15 inches of rain/snow per year, and I would like to avoid supplemental irrigation if possible. The elk and deer are voracious.

I am looking for a shrub and a groundcover, for partial shade and full shade respectively. I also have some full sun areas that are not exposed to wildlife. I've worked up a list of possiblities (at the end of this post) but am curious as to your recommendations and experience. In particular, it's tough to know just how edible these plants are, and if they'll stand up to the wildlife.
