Where should I place my rhubarb?

I have several roots that I want to transplant and put into one or two spots. I have a long bed and a circular garden bed, both of which are in full sun and south facing. I want to put in perennials---cottage garden look--in the circular/kitchen garden bed and something similar in the long bed, but perhaps more like shrubbery, but again focusing on the cottage garden type of look.

I'd appreciate your thoughts about what grows well with rhubarb and whether or not it works better w/ all of the varieties close together, or spread out. Does it have any preferences in terms of soil and acidity?

I have two other locations that could work, one is an overgrown bed of mint w/ poor soil and generally good sun and the other is the beginnings of a perennial border w/ blueberries and mountain laurel, with more room, but also w/ more shade than I think rhubarb would prefer.

Thanks for your expert advice!
