On eating grain amaranth leaves

Posted by louky Kentucky (My Page) on

I planted amaranth, primarily as ground cover/experiment late in summer. It is about knee high at this time. What I planted was grain amaranth from the health food store. Are the leaves of the grain amaranth edible? I know these plants will not have time to make seed this year.

Thanks

Cabrita on the Veggie forum tells me the greens are delicious. I'd harvest and eat them now.
