HAVE: Pineapple Oatmeal Bars from the Olympia trade

Sharing the recipe for those Pineapple bars I brought to the trade since a few asked. Enjoyed chatting with everyone today and thanks for the great plants!

Pineapple Oatmeal Bars

Submitted by Verda Sienbenthaler to the "Favorite Recipes" collection from St. Matthew's Episcopal Church, Fairbanks Alaska (1944)

1 cup butter (2 sticks)

2 cups brown sugar

2 cups oats (uncooked)

2 cups flour

2 teaspoons baking powder

1 tsp salt

Cream butter and sugar. Add oats mixing well. Sift flour, baking powder and salt into creamed mixture. Press half mixture firmly into greased and floured 9x13 pan. Spread with filling and cover with remaining crumb mixture. Bake at 350� for 35 minutes or until light golden brown. Remove from pan while still warm. (I flipped mine out of the pan onto a cutting board). Once cooled, cut in bars 1x3 inches.

Pineapple Filling

1 can crushed pineapple (a little over 2 cups)

1 1/2 cups sugar

1/2 tsp salt

3 Tablespoons cornstarch

1 T lemon juice

2 T butter

Cook first 4 ingredients until thick and clear, about 10 minutes, stirring frequently to prevent burning. Remove from fire, add lemon juice and butter. Cool slightly before using
