Castor Bean

I have had requests for Castor Bean plants at the Farmer's Market. I have never grown them so I don't know how fast they grow. The ones I chose are New Zealand Purple, it only grows to about 5'. Can these be winter sown? If I started them in March, would they be to tall to transport by May? I would also like to start some Mahogany Splendor Hibiscus. Should I start them the same time or earlier? Thanks for any help. Marg
