Patio Pavers and Lawn Edge

Hello all. I have another gardening problem to add to my list.
I didn't know if this came under the lawn maintenance forum, landscaping, or just don't know what to do forum :)

We're having a new patio done in the yard. The paving stones will be slightly sloped of course to keep rain water from flowing toward the house.

The problem is, part of the lawn next to the patio is a couple inches higher than the patio needs to be for drainage. I don't see how I'm not going to trip when I walk from the patio to the vegetable garden.

How do I lower the high part of the lawn along the edge of the pavers? Should I use a sod cutter, then remove some of the soil ( how would I do that to keep it level?). Should I try to cut out some soil from beneath the lawn before the edge of the patio is built?

I'm hoping someone out there has had the same problem and can suggest what to do.....
