which one is hardy in zone 6 and which one figs ripe early?

I don't know anything about the Bornholm. Never heard of it.
But the B/V is an excellent fig to have. Good producer here in Michigan.

I know nothing about the Bornholm.
I did not like my Bayernfeige, it also (winter cold temp) died on me - good riddance...
