pruning after winter damage

Last year I planted out my fig tree, and I wrapped it for winter following advice from the internet. We had an unusually mild winter here, and I think that the fig budded under its wraps. The branches looked burned when it came out of wraps, but I left it in the ground to see if there was any life in it.

Sure enough, in mid-June, about 3 weeks after the oaks leafed out, a cluster of leaves came out at the base of the trunk, and one little set of leaves at the base of the first branch, about 3-4' off the ground (tallest branches reached to 6' or so).

How, and when, should I prune this?

Also, is there a way to wrap a fig for winter so that it doesn't roast in its wrappings?
