How to gauge ripeness?

I have one breba on a small, potted 'Petite Nigra' fig that is slowly turning darker, but still quite firm. I also have a decent crop just now forming on a large potted 'Celeste,' but they will not ripen until fall, of course.

How do I tell when figs are ripe, but not over-ripe?

Also, would it be better to store the 'Petite Nigra' or keep growing through the winter (since it's still small, I thought it might build up more strength). I have south-facing windows and can supplement with lamps if need be.
