Ancient fig

Hi all,
First time posting here.
One year ago I moved in to a home that has a HUGE fig in the backyard. Really lovely tree that, by my best guess, is neigh on 100 years old. The fruit is delicious, and bountiful. (At the end of last summer it was a real mess of unripe fruit, and falling leaves.)
I want very much to treat this tree with the care and respect it deserves. But I need resources to make sure I'm doing it right.
There is so much plant here that I'm a little overwhelmed.
I've just begun heading off everything I can reach down to 3 to 5 leaves/ fruits per branch. I guess my primary concerns are: Is this a good/ bad time to do this? And is 3 to 5 per branch a good place to start?
