Transplant Help

After a rough winter in Central Maryland, my three figs were killed to the ground. I cut them all down to the stumps after the branches and trunk turned brown and withered. The Celeste and Dwarf Black put out shoots from the stumps in April but the Italian Honey never did. So I ordered a replacement from Park Seed and planted it in mid May next to the old Honey fig stump.

Of course, now in early July the stump of the Italian Honey is sending up shoots. So I want to dig up and give away the new Honey Fig from Park as a housewarming present, but I'm curious what would be the best way and time to handle the transfer.

Should I dig it up now, pot it, and transplant quickly? Let it get established in the pot and transplant later? Dig it up in the fall after it has gone dormant and transplant then? I'd like it to have the best chance of surviving in its new location, but I don't know what gives it the best odds of making it through the winter in its new home.
