What affects the color and flavor of figs?

I just ate my first fig of the season today. It was definitely ripe (hangman's neck, soft to the touch, fell off of the tree by itself, no latex taste), but had an insipid flavor and a light green/purple on the outside, with light green on the inside, even though it came off of a Hardy Chicago. The last crop this tree gave me was two years ago, and they ripened more than a month later, were a rich purple all the way through, much smaller, and had excellent flavor. This year's entire crop of figs look like they are going to turn out like the one I ate today. What did I do wrong?
