Harvest/Ripening

We have issues with critters and i want to learn more about harvest ripeness and quality. It would be good if we can pull them slightly early and ripen them inside. Is there a guide or can some folks offer up their experience? We're in zone 8 Georgia and have a big old "local" fig; probably Celeste or Brown Turkey. We also have a young orchard with a wide variety; I don't have all the tags. Some golden, some purple. Maybe 15 varieties on the property all together.
