Capri FIGS

I have two of my trees I think they are Capri figs who need our friend the Fig Wasp [who refuse to live in my area] for pollination. They produce lots of figs which do not ripen. Before I reached the Capri fig conclusion I air-layered couple of branches which successfully produced lots of roots. I left them in pots hoping they will act different from the mother tree I hope.
Also I removed the figs just when it stared to get some pink color and left them on the kitchen counter. They ripened this way: the outside in dark brown, the inside is moist but not sweet, the outside skin is just like leather but my grand kids ate them any way. I am planning to graft these two trees with branches from my good brown turky I may succeed or I may not but at least I tried.
