Should fig leaves fall as last crop comes in?

Just an observation regarding fig leaves. Here in Florida, the two large trees nearest my house are as always, full of fruit in October. One is Brown Turkey Fig and the other is some Whitish Greek variety. But in both cases, they lose all the leaves before their fruit ripens. Whitish fig tree:

The fig trees in my back yard all have fruit and full foliage. In fact, there is constant new growth of leaves and branches even today.

Why do other trees lose leaves while my own do not? I should add that mine are given compost tea every other day and have a 4 inch layer of mulch. Is this the difference? And how do they fare in other parts of the country?
