That is strange my fig trees are still producing leaves. I am not expert but from my reading the leaves are very important for the health of the fruit. They produce sugar and carb and send it to the roots and in turn the roots feeds the fruit. In your case could be lack of nutrition and the trees are not able to handle the load of fruits and leaves. This just a guess or could be lack of water or too much water. My brother in law lives in Orlando and he mentioned to me it have not stopped raining for three months.

My fig tree does the same thing, and so does my neighbor's.
My tree is still young, but his is mature. Maybe it's common here in FL. I know that his tree dropped the leaves last year as well.

Given the hot humid climate it's probably a fungal or bacterial disease causing late season defoliation. Cultivars vary in their resistance to these diseases. You might look into a fungicide for those varieties that defoliate.

Fruit quality will suffer greatly without leaves. The fruit is probably worthless.
