I love to can. I have only been canning for the last few years, but I find it very rewarding.
I love knowing where my food comes from and what was put into it. And of course the sense of pride I get knowing I made it.
So far I have only canned jams, jelly, syrup, and Salsa. I had planned on doing some spaghetti sauce but I ran out of tomatoes.

I just finished making Fig Preserves that are just heavenly. I use Brown Turkey figs from my own tree.
When the okra are prolific I make hot Texas pickled Okra- yummy! I use my own okra and Tabasco peppers that I grow.

It's still not cheap but the taste is divine. And I have the most wonderful hurricane supplies.

There is a very active canning forum here on GW. Check out the Harvest Forum. Tons of recipes there that have been tested as safe. Lots of good advice.

Your fig preserves sounds amazing! I just purchased a small fig tree from lowes. Maybe in 10 years I will have enough figs to make something.

Fig preserves are a lot of work for me but ahhhhh- the flavor!
One of my canning mentors uses rosemary in hers.
I tried bottled Key Lime juice as a change and really like the taste pop.
Fig preserves work well with meats like lamb, pork or chicken. Add balsamic vinegar and you have a wonderful glaze.
Pour fir preserves over a block of cream cheese and serve with crackers. An incredible dip or appetizer!
LOTS of uses for Fig Preserves besides a wonderful sweet treat.
Watch out with the Harvest Forum. It's addictive!
