sweet potatoes?

I've got a sweet potato in the kitchen that has sprouted. And I've always wanted to grow them. I've got the space in what is soon to be the former tomato/broccoli bed. Any advice? Should I just plant pieces, with sprout side up, and give it a little mulch?
How long does it take them to make more sweet potatoes? I've read that they're aggressive, but is that just the mother vine or do they self-propagate? My neighbor will kill me if I plant something that can't be killed. He's not interested in food from the yard, just landscaping. I'm not interested in landscaping, just food for me and the wildlife.
But he's a nice guy and we get along, so I don't want to piss him off by planting unkillable sweet potato vines near his areca palms.
Advice?
