OK...this may be sounding like a broken record but can someone please tell this 2nd year organic gardener what going on

I did set out to grow pumpkins...they just popped up...I usually take ground up veggie scraps and put them in the ground to encourage worm activity. Well..up came the pumpkin plants. My wife said leave them alone and so I did. Well they're about 3 months old, about 50ft long and only 2 pumpkins made it. What am I doing wrong?
