Hi Trini

All winter squash can be eaten when not mature but I think you want the fully developed one. What variety did you planted? It is usually ready when it changes color depending on the variety, the stem looks shriveled and brown another sign, where it is leaning has a pale color. If it is a buttercup it stays green when mature.

Here are some winter squash for you to see, on the left is the buttercup, in the middle blue kuri and at the right red kuri and they are all mature.

Thanks Silvia,
I planted so many seeds, I don't remember which one this is. :) I think my mom brought the seeds back from the Islands. If that is the case, it may have a lot more growing to do. Next time I'll more diligent in tagging it. Yours are lovely.
I mixed the vine in with watermelon but nothing on that vine yet.

1 of the rules you can go by, depending on the squash, is to try to make a dent in the rind w/ your fingernail. Mature Winter squash w/ a hard shell should be hard enough that you can't make a mark. If the fruit does not change color, I also wait until the stem is completely dry w/ no trace of green on it. My Winter squash vines die back when fruits are fully ripe, so that makes it a lot easier...

The stem is still green and the shell is soft so I will be more patient. Thanks for the info
