Garlic breath

I like garlic. My wife likes garlic. My kids like garlic. We are obviously not a family of vampires. But my luck at growing garlic sucks. I have managed to sprout many cloves. I have planted them in decent soil, bad soil and good soil. But each time they get about a foot tall before withering and dying. When I dig up the cloves there is usually not much left to them.

I know they are a cool season crop and I now know that, like most other crops, the variety can make a big difference on the harvest, especially when our climate is taken I to consideration. I think there is a variety called Cajun Red or something like that which is supposed to do well in our area. But I am wondering how many of you have had successful garlic crops and what has been your best variety?

Edit: Sorry, the variety was Creole, not Cajun.

Edit edit: And it would seem my failed plantings have been due to not chilling the cloves prior to planting.
