Star fruit question.....

Recently bought a house with a large mature star fruit tree, that is (literally) dripping with fruit. They are starting to ripen, but I can't really tell when they'll be the sweetest. I've tried ones that are all yellow, and sometimes they're very sweet, other times mouth-puckering sour. I've tried some that still have green on the ribs, and same thing, some are sweet, some not. I pick them from the tree, can't eat the ones that have already fallen, the fruit rats get them. Will they continue to ripen after I pick them? Is there any way to tell when they are the sweetest without doing the taste test on each one?
