Sour starfruit

I grew my friend a starfruit from seed from my tree, which was very compact and had very sweet fruit. I always heard they would come true from seed, but her tree is HUGE and the fruit is so sour it tastes like lemons. One of her friends told her to put seaweed around the plant to make the fruit sweet. I suggested sulfur, which is what we did to orange trees with sour fruit.
Anyone have any suggestions? This tree is loaded with fruit, but it's all inedible. It's just falling on the ground, because nobody will eat it. I wanted to gather some seed, but if it's just going to be sour, I don't want to grow trees.
