Best loquat cultivars for NW Florida?

Do you have suggestions for good loquat cultivars for NW Florida, and what varieties are good for grafting? Which are good root stock?

I live inland central FL and grow a seedling loquat, I'm lucky its very good tasting and grew very quickly. I get lots of fruits every year. I'm sorry I know nothing about root stock and grafting...

Here's a good link that has a list of loquat varieties. I think you can just use any loquat seedling for rootstock.
