Probably because the seeds aren't so good for you if you eat more than a few. I prefer to leave pyracantha for the critters, myself. It's so decorative and they love the berries.

My grandmother and mother both made pyracantha jelly every fall. It's delicious and safe. My grandmother taught me now to eat the berries around the outside to avoid the seeds, but I never ate many.
