Now its a month or so later and the patch is in serious decline due to the colder weather. This is helpful because it makes it easier to remove all of the stems. In fact, I wait for this to happen.
This plant is unusual in the fact that it grows both tubers and corms. The knobby growths are the corms and the longer, tubular growth is the part harvested. The corms are replanted to make new plants.
From the pile of roots that I just dug up, I used pruning sheers to cut off the tubers. This is my harvest. Now I need to cure the yucon for a few days, just like sweet potatoes, to allow some of the starch to convert to sugar, making the roots sweeter.
Darren - Actually, it wasn't a lot of work. No more than sweet potatoes. The wood chips go very deep in that area so the plants popped out of the ground very easily.
Keiki - How many tubers per plant? Well, each one is a different size. The clumps that are larger give more and larger tubers. If I didn't harvest the tubers this year, then they would be even larger next year. What I harvested yesterday were much smaller than usual because I usually don't harvest them all. As for the corms, they can be left out for a while but I find it best just to replant right away. Would you like me to get your corms in the mail after Christmas?
