hardy, larged-leafted, in sun?

I really need some lush, crazy foliage to make make my full sun, zone 5B border work. I've got lots of grassy and ferny leaves among the flowers. but it's all looking too fringy and delicate. Hostas won't work, because I think there's too much sun and anyway I'm afraid to grow them because I hear they're deer-candy. I haven't tried castor bean (which is beautiful) because it's too red for that border. Is acanthus mollis out of the question? Has anyone grown acanthus spinosus, which is supposed to be hardier? Is cardoon impossble in my climate? Any other ideas?
