Variegated Amorica (Horseradish)

Hi,
I've been growing this plant for several years and noticed offshoots from several stalks. I potted them up and while I have quite a few, only one exhibits variegation. I faintly recall reading somewhere that the variegation may not show up until plants are mature, so I am wondering if this is indeed true, or if the rarity of variegated offshoots is the reason why the original plant was so expensive. Any assistance or experience is appreciated.
