Your local cooperative extension service is a good place to start. Here in Maryland I'm able to get publications from the extension service by calling their toll free #. They are a valuable source. You can access a lot the info there online.

Also try using google. Exa: type in, "fall crops virginia" or "vegetable rotation."

Many vegetables should be directly seeded such as beans, okra and carrots. Others such as beets and chard can be directly seeded as well. Lettuce I always start in pots to keep the slugs from eating it as it germinates.

I try to remove plants from the garden by cutting them off at the base when possible. That way the roots are left to decompose. Others may do it differently.

Get a hold of Eliott Coleman's Four Season Harvest. He gives planting dates and rotations.

Check with your state's Extension Service. Each county has it's own Cooperative Extension Office which provides free publications and information for the asking.

The following two images are excerpts from the Vegetable Planting and Planning Calendar for Missouri complete with spring and fall planting dates, how much to plant per person, etc. Just call up the office in your county. Look under the "Government" section of your phone book under "Extension". They will also have valuable vegetable/gardening tables available specifically for your area.
