chitting potatoes

Greetings! I have a few questions about "chitting" potatoes (potato seed). I have whole potato seed from a garden supplier. I heard of "chitting"-getting a jump start on the spouting of the potatoes by having them exposure to moderate light in egg cartons-then planting after the sprouts have come out from the potato.

Ok, do I add any water or psrinkle water on the potatoes at any time? I am seeing very tiny sprouts staring and I am giving them light in an airy place.

Am I doing anything wrong? How long is this process supposed to take?

I have planted some other potato seed directly into the soil ( very good composted and pH balanced and well fertilized soil!) and have not seen any spourts yet.

I would appreciate any input here folks. I would like to be able to raise potatoes in my garden.
