collard greens

I have two collard greens plants that have already flowered and now it look like it has seed pods all over the plant. My question is should I wait for the pods to dry alittle before I break open for seeds or should I hang the plant upside down so that the plant can dry out and then put the pods in a plastic bag after it dried and break open pods for seed. Or can I just leave the seeds in the pods for next years use. Please Help.
