Four Season Vegetable Gardening

How long will these last into Spring?

I'm trying to plan my Fall garden. I know some plants are frost (or half frost) hardy and will, therefore, produce into the Spring. Assuming we have a mild winter, I'm wondering how long will they produce into the Spring? Will they keep producing past the Spring planting date and into the early summer? Spring planting here usually starts March 15 (or so), so will any of these still produce beyond that? I am wondering what I will be pulling up and when.

These are the veggies in question: Kale, broccoli, brussels, spinach, lettuce, carrots, chard. peas, onion.

I'm in South Louisiana.

I live in Zone 6 in Pennsylvania. I've always had luck with Spinach overwintering in "low grow tunnels". It's usually in pretty good shape until mid april. Then they start getting "leggy" and the new spinach has already kicked in. Mid April to early May is the "last frost date" in my area. (exact day depends on who you ask).

They'll go to seed when it gets hot, which I imagine happens fairly early in South Louisiana's spring.

If you love cool-season veggies, then definitely you are doing the right thing cultivating in fall and winter down there, making the most of the cooler months. I'm guessing your spring probably goes by in a quick blip and then it is summer.
