Is there a 'pretty' cover crop for raised beds?

Hi,

I wanted to sow a cover crop and leave it in place over the winter, in my 4x4 raised beds. I was hoping for something pretty, that might turn a pretty dark maroon, or some such. Anyone have any ideas?

Crimson clover is gorgeous when it blooms in the spring, and the bees love it. The foliage is green through the winter though.
