I would just say, plant plenty of the red varieties, the cooler weather makes them color up beautifully.

Get the kales and chard in SOON as they really grow slower than the lettuce (at least in my garden).

I haven't tried collards, but I have flowering kale and flowering cabbage in the garden now--transplants I bought at the grocery store because they were pretty. ;-) After a couple of frosts I'm going to try them for taste. I've heard they taste almost as good as the varieties selected for culinary purposes.

I planted transplants in pretty diagonal patterns (green lettuce, red lettuce, , green lettuce, kale, red chard, then repeat with red lettuce and so on). My fall/winter garden is in the front yard, as it is the south side of the house, and it is also more likely to get my attention when the weather gets cold. Anyway, I want it to look nice before the cover goes on it, so it is a bit decorative, too.
