Four Season Vegetable Gardening

Thanksgiving Salad

Hi,

I have 3 "low grow tunnels" about 1.5 feet high and 12 foot long. I was able to harvest enough Corn Salad (Mache), Radishes, Spinach, Carrots, Lettuce, Red Beet Leaves and Kale for Thanksgiving Dinner Salad for 10+ people. Most of the "greens" were Corn Salad. That stuff really grows in the cold weather. Now I'll have to see if I can pick a salad for Christmas Dinner!

Beets are wonderful for thanksgiving........ colorful and the vinegar sets off rich foods like potatos and meat....... :)
