I am not sure they are used to flavor in Indian dishes. In south I know they are not, not sure in the North.. The flowers start to open late evening and by the morning they are falling to the ground. It almost forms a white and orange carpet in the early morning around the tree..Beautiful to see the 6-8 weeks they flower..And ofcourse the soft fragrance that comes from the flowers..
