Couple of Pruning questions

I planted some dwarf yedda indian hawthornes two springs ago. I thought I was doing the right thing by letting them get established before I started pruning them. Well, something needs to be done now. They have grown tall but haven't bushed and filled out. I guess I should have pinched the stems when I planted them but lesson learned. So basically, how short do I need to cut the long stems growing straight up from the plant to encourage more branching, a foot of the ground? Lower?

Also, I bought a few daisy gardenias that I am about to plant, do I need to pinch them off also when I plant them?
