How do you overwinter them?

I just let the tree die down and leave it alone all winter. In the spring it shoots up a new stalk, and the process starts all over again. I have it planted at a southeast corner of my house. I have no experience at this, it just so happened that it grew bananas this year. I think it is because, for the first time, I did not cut back the old stalk in the spring. I forgot it. Already a new stalk has emerged beside the one with the bananas. I will cut back the old stalk with the bananas as soon as the bananas ripen.
