There is a helpful link below, it will tell you that artichokes need sandy, well draining soil. So you need to make that.
They also do not like splashback on them from rain that bounces up from soil.
They need a bit of lime added to the soil as we are acidic.
You need to plant them in full sun. It says to plant them in January on the website, but I'd recommend that you plant them after March 15th in Georgia.
They take up a lot of space.

Thanks for that link. It said that I could do them in large containers so I think that I will. That will be the best way for me to control the soil and place them in a sunny area since I have very little. I think they will add character to my container garden plus we love to eat them.

Now, when they mean a large container, you must realize that these need a LARGE container. They grow a tap root. I don't even have a pot large enough for them. Artichokes can be about 4' in diameter and you'd probably need a pot that is at least 3' deep.
