Do they need lime added? Coconut coir is pH 5.5 to 6.5 and supposedly takes a couple of years to break down.

Streps in nature grow on limestone hills and they like it just a bit on alkaline side. Some of them more than others. I know that Texas Hot Chile will not tolerate acid soil and perform very poorly.
6.5 is OK - but 5.5 - too low.
