Post Frost Cleanup

Although we covered our variegated ginger this winter when it got into the 20's (and wove Christmas lights around their base). Still, the outer leaves really took a hit. What should I do to clean these guys up to maximize the non-affected plant?

I'd cut them back to ground level. This ginger only blooms on second year growth and from the looks of your plants, they won't produce a bloom this year except the planting on the left might have one or two stalks that will continue to grow. The rhizomes are pretty cold hardy so I think you'll see new growth shortly if not already.
